Grandma’s Mac Salad

Summer may be coming to an end but the weather is just warming up which means more backyard BBQs! And we have the perfect side dish to share with you, Grandma’s Macaroni Salad. Or maybe a more appropriate name is Condiment Salad because we’re pretty sure Grandma opened the fridge and just added all the pickled items she had inside the door. Regardless it’s delicious! A perfect balance of creaminess and crunch with a bit of tang and saltiness. Yum!

Here's what you'll need...


Ingredients:

  • 8 oz package - Shell or Elbow Macaroni

  • 1 Celery Stock, chopped (this was our revision to grandma’s recipe)

  • 1 Medium Dill Pickle, chopped

  • 4 Green Onions, chopped

  • 2 Teaspoons Dry Parsley

  • 1 Clove Garlic, mashed

  • 2 oz Stuffed Green Olives, sliced, with their brine

  • ⅓ Cup lemon juice

  • 1 Cup Mayonaise (we used Best Foods)

  • Salt to taste - but you won’t need it

Equipment:

  • Chef’s KnifeCutting Board

  • Large Bowl

  • Saucepot

  • Collander

  • Measuring Cup

  • Teaspoon

Directions:

  • In a medium saucepot, bring salted water to a boil

  • Add macaroni, cook until tender and drain

  • Add drained and cooled macaroni to a bowl

  • Add remaining ingredients and toss lightly

  • Add salt to taste and chill - we recommend chilling overnight to really let all the flavors marry.

  • Enjoy!
